What does commercial pizza oven cleaning involve?

Commercial pizza oven cleaning covers the cooking chamber, the door faces and seals, the control panel, and the exterior steel, with the hearth cleared dry rather than chemically treated. The work is finished with before-and-after photographs and a dated service report.

The part operators tend to underestimate is the outside of the oven. Grease and flour paste settle on the control panel and run down the door faces, and because the oven runs hot all service, that film bakes on in layers rather than wiping away. On the oven photographed below, the manufacturer badge on the control panel was not legible until the panel had been cleaned.

How is a deck oven cleaned differently from a conveyor oven?

A deck oven has a porous stone hearth that absorbs anything applied to it, so the deck is cleared dry and degreasing is limited to the steel. A conveyor oven is stripped instead — belt and crumb trays out, carbonized crumb removed from the chamber and air fingers.
